This week Bluebird CSA shareholders will enjoy a 1/4 lb. of stone ground 3 grain pancakde mix from the Callaway Gardens Country Store. These Georgia grains include stone-ground rye flour and stone-ground whole wheat flour.
Callaway’s Three-Grain Pancakes
1 1/4 cup milk
2 T. oil
1 3/4 cups stone ground 3 grain pancake mix
Stir egg in bowl until well mixed. Beat in milk and oil. Add stone ground pancake mix and stir until dry ingredients are just moistened-the batter should be lumpy. Bake on hot, greased griddle, hot enough to make a drop of water dance on the surface before evaporating. Turn just once when pancakes begin to lose their gloss and bubbles begin to burst. Buttermilk pancakes can be made by adding 1/2 t. baking soda into above recipe and substituting buttermilk for sweet milk.
|1/3||cup fresh rosemary leaves, chopped|
|1||Tbsp. fresh lemon juice|
|1 tsp. vanillaMake the rosemary syrup: In a small saucepan, simmer all syrup ingredients, except vanilla, for 10 minutes. Remove pan from heat and stir in vanilla. Cool syrup for 30 minutes and strain through a sieve into a 2-cup measure.|
